Green Tea Rice Pudding
2 1/2 cups of whole milk
1 Tbls. Matcha green tea powder
1/3 cup of long or short grain white rice
1/8 teaspoon salt
1 large egg
1/4 cup brown sugar
1 teaspoon of pure vanilla extract
1/4 teaspoon of ground cinnamon
1/3 cup raisins
Stir Matcha green tea powder in milk until dissolved. In a medium saucepan, combine Matcha milk mix, rice and salt and bring to a boil. Reduce heat to low and simmer until the rice is tender, about 20 minutes. Stir frequently to prevent the rice from sticking to the bottom of the pan.
In a small mixing bowl, whisk together egg and brown sugar until well mixed. Add a half cup of the rice mixture - a Tablespoon at a time - beating to incorporate.
Add egg mixture back into the saucepan of rice and milk and stir, on low heat, for 10 minutes or so, until thickened. Be careful not to have the mixture come to a boil at this point. Stir in the vanilla. Remove from heat and stir in the raisins and cinnamon. Serve warm or cold. Serves 2-3.

Green Tea Cheese Cake
1 cup ground shortbread cookies or graham crackers (about 6 ounces)
Two 8-ounce packages cream cheese, room temperature (do not use whipped or "light" products)
1/2 cup fromage blanc cheese
3/4 cup plus 2 tablespoons sugar
4 large eggs
2 Tablespoons Matcha green tea powder
4 tablespoons of hot water
Preheat oven to 325°F. Press cookie crumbs or graham crackers firmly onto bottom (not sides) of 8-inch-diameter springform pan. Wrap outside of pan tightly with 3 layers of heavy-duty foil. Using electric mixer, beat cream cheese, fromage blanc, and sugar in large bowl until smooth. Add eggs 1 at a time, beating until incorporated after each addition. Beat in green tea powder in hot water until smooth and stir well into mixture. Pour batter over prepared crust in pan. Place cakein roasting pan; add enough hot water to roasting pan to come halfway up sides of springform pan.
Bake cake until set but center moves very slightly when pan is gently shaken, about 1 hour. Remove cake from roasting pan; cool 1 hour at room temperature. Refrigerate uncovered overnight. (Can be prepared 2 days ahead. Cover and keep refrigerated.)
Green Tea Frozen Yogurt
1 teaspoon Matcha green tea powder
2 1/4 cup milk
1/2 cup sugar
1 envelope gelatin
1/8 teaspoon salt
1 1/2 cup plain yogurt
1/4 cup corn syrup
Mix Matcha with 4 tablespoons of warm water until dissolved. Combine the milk, sugar, gelatin, and salt. Let stand 1 minute. Cook over low heat for 5 minutes or until the gelatin dissolves. Let the mixture cool completely. Stir in the green tea, yogurt, and corn syrup. Pour into a bowl; cover and chill for 8 hours. Pour into a ice cream machine and freeze according to manufacturer's instructions.
Matcha Green Tea Vanilla Cookie Recipe
2 1/2 cups of all- purpose flour
1 teaspoon of Matcha green tea powder
1 teaspoon of baking powder
Pinch of salt
1 cup of butter, at room temperature
1 1/4 cups of granulated sugar
2 large egg yolks
1 1/2 teaspoons vanilla extract
Granulated sugar for sprinkling
Combine the flour, green tea powder, baking powder, and salt. Combine the flour, baking powder, and salt.
In a large bowl, cream the butter and sugar. beat in the egg yolks. Beat in the vanilla extract. Gradually blend in the dry ingredients. Cover and chill for one hour.
Preheat the oven to 375 degrees. Lightly grease 2 baking sheets.
On a floured surface, roll out the dough to a thickness of 1/4 inch. using a 2-inch cookie cutter, cut out cookies and place 1 inch apart onto the prepared baking sheets.
Bake for 10-12 minutes, until lightly colored. Sprinkle granulated sugar over the hot cookies and transfer to wire racks to cool.

Green Tea Bread Pudding
1 loaf French bread, cut into 1-inch squares (about 6-7 cups)
1 qt milk
2 teaspoons Matcha green tea powder
3 eggs, lightly beaten
2 cups sugar
2 Tbsp vanilla
1 cup raisins (soaked overnight in 1/4 cup bourbon)
1/4 teaspoon allspice
1/2 teaspoon cinnamon powder
3 Tbsp melted unsalted butter
Preheat oven to 350°F. Mix Matcha green tea powder in milk until dissolved. Soak the bread in Mathca milk mix in a large mixing bowl.
Crush with hands until well mixed and all the milk is absorbed. In a separate bowl, beat eggs, sugar, vanilla, and spices together. Gently stir into the bread mixture. Gently stir the raisins into the mixture.
Pour butter into the bottom of a 9x13 inch baking pan. Coat the bottom and the sides of the pan well with the butter. Pour in the bread mix and bake at 350°F for 35-45 minutes, until set. The pudding is done when the edges start getting a bit brown and pull away from the edge of the pan. Can also make in individual ramekins.

Matcha Green Tea Pudding
2 eggs
13 ozs. milk
2 ozs. sugar
2 Tablespoons Matcha
1 3/4 ozs. boiling water
Sift the Matcha for a more mellow flavor. Add Matcha to boiling water and whisk. In a small saucepan steam the milk and sugar over moderate heat. Stir the mixture until the sugar dissolves.
Put 2 whole eggs in an empty bowl and mix gradually adding the milk. Add Matcha and mix very well. Pour through a sieve or strainer twice to remove any lumps.
Pour into 6 pudding cups and place in a roasting pan. Fill the pan partially with hot water. The water should cover the bottom half of the cups. Be careful not to splash water into the cups!
Bake the pudding in preheated oven for 10 minutes at 356F. Reduce the temperature to 320F and bake for another 20 minutes. Cool and serve! Makes 6 Servings.

Green Tea Whipped Cream Recipe
1 cup heavy cream
1/3 cup sugar
2 ozs. sugar
1 teaspoon Matcha
1 teaspoon vanilla
Whip cream until almost stiff. Add sugar, Matcha green tea powder and vanilla; beat until cream holds peaks. Spread over top of your favorite desserts and sweet beverages like our Matcha frappe'.
Green Tea Ice Cream
Green tea ice cream is often served as a dessert in Japanese restaurants. Green tea ice cream is called matcha ice cream in Japan. Matcha is tea powder used in Japanese tea ceremonies.
2 cups heavy cream
2 cups whole milk
8 egg yokes
1/8 teaspoon salt
2/3 cup Sugar
2 Tablespoons Matchagreen tea powder
In a large bowl beat the egg yolks with the sugar and salt. Set aside.
In a heavy saucepan, scald the milk. Remove from the heat. Vigorously stir in the Matcha green tea powder. Add heavy cream and bring to a simmer over medium-high heat. Ladle 1/3 of the cream mixture into the eggs and whisk well to combine. Add all the egg mixture to the pot and cook over low heat, stirring, until thick enough to coat the back of a spoon, about 5 minutes.
Cool in the refrigerator, about 2 hours.
Process the mixture in a ice cream maker.
Freeze in ice cream maker, then transfer to an airtight container and put in freezer to harden.
